OUR TAKE ON DAIQUIRI, using spice rum as a base with fresh aromas of lemongrass and kafir lime. Fined strained through cigar leaf, adding a touch of smokiness and served over coconut oil, washed ice for its beautiful creamy aftertaste.

LONG AND REFRESHING DRINK, fresh notes of cucumber juice blended together with floral aromas of Marigold. Served long and fizzy, topped with cider.


OUR TAKE ON MARGARITA COCKTAIL, based on Mezcal therefore expect smoky notes, flavour profile of mango chutney which adds complexity and spice notes.

FOR ALL BATIDA OR PINACOLADA LOVERS, we use our secret blend for better texture. Flavour profile combines fruits, pine nuts and cookie spread.

The Skellig Cocktail

MARRIAGE BETWEEN MANHATTAN AND IRISH COFFEE, we replace vermouth with cherry and chocolate, wine and float warm almond milk froth for unique flavoured texture and temperature contrast.

The Hula's Island 

TIKI COCKTAIL BASED ON GIN RATHER THEN CLASSIC RUM, complexity of sweet spices combined with exotic fruit and creaminess after fudge, yet still holds a dry finish after the gin base.

Apple of Louisiana 

INSPIRED BY CLASSIC SAZERAC, this is for Sazerac or old fashion lovers drink, we replace the rye base for apple brandy and add absinthe jelly to keep the cocktail cold all way through.

Herky Jerky

TWIST ON MINT JULEP, inspired by steak and mint jelly combo. Will surprise with complex and bigger body taste, expect savoury notes with a long finish.

The Gas Light 

SIGNATURE DRINK OF SOLERA, due to the gas work factory heritage. Gin based drinks can remind you of the classic gimlet, fresh - citrusy but a balanced cocktail - all served with an electric touch.
